--When making gravy, allow 1 to 2 tablespoons of flour for each cup of
liquid. Be careful not to use too much or it will dilute the flavor.
--If your gravy turns out lumpy anyway, fix it by blending it with a whisk. If that doesn’t work, run it through the blender until it’s smooth. --If the color is too pale, you can perk it up by adding about ½ teaspoon of instant coffee. --If your gravy is too salty, add a few slices of potato and allow it to sit. Remove the potato before serving.
--Too thin gravy can be thickened by cooking longer or by whisking in a little cornstarch or flour mixed with cold water. --If you don’t have enough gravy, you can increase the amount by adding melted butter and hot turkey stock. --Grease can be removed from gravy by laying a couple of slices of white bread on top to absorb the grease.
