--Look for berries that have a waxy film called the bloom which is a natural protective coating --Check the bottom of the container for berry stains. Juice indicates that the fruit has been crushed or bruised. --When you get them home, pick through the berries and remove any that are bruised or moldy. This will help keep the other berries fresh, --Berries should be refrigerated and will keep about 7-10 days if properly stored. --Blueberries should be washed just before eating. Even frozen berries should be rinsed before serving. --Do not wash berries before freezing because it will cause the skin to toughen. Just lay berries on a cookie sheet lined with a paper towel and place in the freezer. Once they’re frozen, pack them in containers.
--Do not defrost frozen berries before adding to recipes. This will keep the juice from staining the batter. --Fresh blueberries can change color when added to recipes, especially those containing baking soda. To prevent this, add berries at the last minute and fold them in very gently. --Simple recipes work best, like this amazing cobbler in a cup. Just blend fresh berries with sugar, cinnamon flour and lemon juice in a ceramic mug. Top with a circle of pastry or a refrigerator biscuit and bake.
