-Easter surprise cup cakes will be a big hit with both kids and
grownups. Bake a batch of cupcakes either from scratch or a mix. Then
make the “surprise” by cutting out a small piece of the cup cake in the
center before frosting. Insert marshmallows, chocolate eggs or easter
candy, frost and decorate the top of the cup cake if desired.
-Use egg salad to make bunny and Easter egg shaped sandwiches. Just use
cookie cutters to cut the bread before assembling the sandwich. Decorate
by painting designs with food coloring. Put a few drops of food coloring
on a paper plate for easy disposal and use a child’s craft brush to
apply food coloring. Another option is to use food coloring pens that
are available at cake decorating supply shops and some grocery stores in
the baking section.
-Welcome spring with flower shaped lemon bars. A quick cut with a cookie
cutter makes the perfect shape. To get the cleanest cut, chill the pan
of uncut bars for several hours in the refrigerator. Using a 3- 3 ½”
cookie cutter, a 9”X13” pan of lemon bars will yield about 7 or 8 shaped
bars. Make your favorite lemon bar recipe or try this one:
Better Living Lemon Bars
Crust:
1 cup unsalted butter, softened
1/2 cup powdered sugar
2 cups flour
Lemon Filling:
2 cups sugar
4 tablespoons flour
1/2 teaspoon baking powder
4 eggs
6 tablespoons fresh lemon juice
1/2 teaspoon fresh lemon rind
Method:
Preheat oven to 350 degrees. Mix together butter, powdered sugar and
flour until well blended. Press mixture into the bottom of a 9x13-inch
glass baking dish. Bake for 20 minutes.
Blend sugar, flour and baking powder together into a mixing bowl. Add
eggs, lemon juice and lemon rind. Beat until well blended. Pour mixture
over crust and bake for 25 minutes.
Allow bars to cool, then dust with powdered sugar.
- Here’s an idea for a basket that’s good enough to eat. It's formed by
wrapping the refrigerator dough breadsticks around a foil covered bowl.
Spray the foil covered bowl with vegetable spray before building the
basket. Starting at the rim of the bowl, coil breadsticks around the
perimeter, working your way up to the bottom of the bowl. Brush with egg
wash and start by baking as directed. Depending on the size of the bowl
it may need to bake another 10 minutes. After the bowl has finished
baking, let it cool completely before removing the bowl from underneath.
To make the handle, braid 3 bread sticks together and drape over the top
of the bowl so that the length of the handle runs from one side of the
bowl over the bottom to the other side. Brush with egg wash, bake as
directed and let cool thoroughly. Attach to the “basket” with
toothpicks. If basket does not sit flat, slice off a think layer from
the bottom to level it off.
--Add an elegant touch to your table with beaded eggs. Cover a styrofoam
egg by hot gluing craft beading onto the form. Purchase both the
stryofoam forms and the beading at craft stores. The beading is usually
in the bridal section.
-If you’re tired of egg dye, decoupaged eggs couldn’t be easier to make.
The designs are actually cut outs from paper napkins. Cut out shapes
from napkins using cuticle scissors and take the top layer of the
napkin, discarding the other layers. Lay the cut out gently on the egg
and use a glue wash or decoupage medium to apply designs to a blown out
egg.
-Finally, to display your creations, try using napkin rings as egg
stands.
