Norfolk company joins allergy-free product drive for tsunami victims

NORFOLK – Concern for victims of the March 11 earthquake and tsunami in Japan has moved people and companies in the U.S. to help. 

As the tragedy has fallen from the headlines, it’s never been far from Tai and Rimi Eto’s thoughts. The New Jersey couple wondered what could be done for people in that devastated country who are struggling with food allergies.

Rimi is originally from Japan. The Eto’s son has severe food allergies so they got busy reaching out to people who understand the problem.

Lucy Gibney heard the idea and was the first to say yes. Her son also has severe food allergies and so she started Dr. Lucy’s Cookies. In her Norfolk store, she makes gluten-free cookies – made without milk, eggs, peanuts or tree nuts.

On Tuesday, boxes and boxes of cookies left the store, shipped for free by the UPS Foundation.

"Folks are in shelters and just as they would in the general population, many of them have food allergies," Gibney says. "We hope that will make kids and adults who need special products happy."

In all, more than 2,000 pounds of allergy-free products are on their way to Japan.
